  2. medium eggs
  3. 1 large onion, finely chopped
  4. 50g local or white cheese, chopped
  5. 1 tablespoon tomato paste
  6. 1 tablespoon vegetable oil or butter
  7. 1 teaspoon turmeric
  8. Salt and black pepper to tasteJamie
  9. Instructions :
  10. Heat the oil or butter in a non-stick pan over medium heat until hot.
  11. Add the chopped onions to the pan along with turmeric and a pinch of salt. Sauté until the onions are soft and golden.
  12. Mix the tomato paste with a little hot water and add it to the onions. Let the mixture simmer for 2 minutes to blend the flavors.
  13. Crack the eggs into a bowl, season with salt and pepper, and whisk well.
  14. Pour the egg mixture into the pan over the onion mixture. Allow the edges to set slightly.
  15. Sprinkle the chopped cheese over the omelette and cover the pan to let the cheese melt and the omelette cook through .
  16. Serve the omelette with fresh bread or your choice of vegetables .
