Broccoli cream soup with bacon and yogurt

Delicious and light soup with a creamy delicate taste and light smoky aroma. If you want more satisfying, then feel free to replace the water with chicken broth.

  1. Chop the onion and fry in a mixture of butter and vegetable oils until soft. Cut the potatoes into small cubes and send them to the onion. Fry everything together until a light blush.
  2. Pour in water, taking into account the fact that broccoli will be added and cook until the potatoes are soft.
  3. Put broccoli in soup, bring to a boil and cook for 7-10 minutes until soft. Salt, add pepper, pour in lemon juice to taste. You can add a pinch of sugar. While the soup is cooking, fry the bacon slices until crisp in a dry skillet. Put on a napkin.
  4. Pour the soup with an immersion blender until puree. Break the fried bacon into pieces. When serving, add bacon slices, yoghurt and parsley to the soup.
