Cold Pea Mint Soup

The mint gives it a wonderfully fresh taste and aroma, while the green peas add a vibrant summer color to this soup. For best flavor, be sure to chill the soup thoroughly.

  1. Melt the butter in a heavy bottomed saucepan. Add chopped onion and sauté, stirring, until softened, about 5 minutes.
  2. Pour in half of the broth - 500 ml. (I use chicken broth) and bring to a boil.
  3. Add peas, bring to a boil and cook for 2-3 minutes.
  4. Remove from the stove, add the remaining broth, herbs, mint and puree the soup with a blender until smooth.
  5. Add salt, pepper and mix. Place in refrigerator and chill well.
  6. If you like a smoother consistency of soup, you can strain it through a sieve.
  7. Serve cold soup with a dollop of sour cream and chopped herbs.
  8. Bon appetit!
