Fried zucchini according to this recipe is very tasty, with a crispy crust and juicy inside. Zucchini goes great with garlic sauce, which I suggest you make yourself.

  1. My zucchini, cut off the edges and damaged areas, if any. Cut into circles with a thickness of at least 1 cm. Salt and mix. Leave the zucchini to release juice.
  2. Add 2 teaspoons of salt, ground pepper and nutmeg to the flour.
  3. Separate the yolk from the protein. We combine the yolk with a small amount of vegetable oil (1 tablespoon). Whisk until thick.
  4. Pouring half of the remaining oil in a thin stream, beat the egg mass at medium speed. Then increase the speed to maximum, add the rest of the oil and lemon juice or vinegar. Whisk until the sauce is thick enough.
  5. (If you've been whisking for a long time and the sauce is still thin, add more vegetable oil.)
  6. (If you pour all the vegetable oil at once, then nothing will work. Therefore, be sure to pour in a thin stream.)
  7. Add sugar, salt and black pepper. Squeeze the garlic into the sauce.
  8. Finely chop the dill and add to the sauce.
  9. Stir - and the garlic sauce is ready!
  10. Drain the liquid from the zucchini and roll them in flour. Leave for 5 minutes so that the breading absorbs the liquid, and then again roll in flour.
  11. We spread the zucchini in the heated vegetable oil. Fry on both sides until golden brown.
  12. Serve zucchini with garlic sauce. Bon appetit!
