I wanted to cook something new, and unusual, and the choice fell on this highly carbonated drink with a spicy peppery taste of ginger.

  2. 2. Peel the ginger root and grate it on a fine grater. Squeeze juice from lemons.
  3. 3. Bring 300 ml of water to a boil. Pour into a prepared glass container. Dissolve sugar in it and add grated ginger. Leave the mixture to cool completely.
  4. 4. When the ginger infusion has cooled down to about 30 ° C, add dry quick-acting yeast and stir until it is completely dissolved. Add lemon juice.
  5. 5. Add filtered water to the ginger infusion (so that the total volume is 2 liters). Pour the liquid into a plastic bottle. Leave it in a warm dark place for 2 days. If the room is not quite warm, the process may be delayed. The readiness of the drink will be indicated by the sealing of the bottle and its inflation. Transfer the bottles to the refrigerator to fully mature (24-48 hours). It remains to carefully open the cork (carefully: a pressurized drink can go over the edge of the bottle). Strain the ginger ale through several layers of cheesecloth. Pour into storage containers and seal tightly with lids. Store prepared ginger ale in the refrigerator.
