Horchata is one of the famous Spanish drinks. Horchata is native to Valencia.

  1. 1. For the chufa horchata, rinse the chufa in water until it runs clear.
  2. 2. Soak chufu in water for 24 hours.
  3. 3. Place the chufu in a blender along with powdered sugar and 1 liter of water. Grind until smooth.
  4. 4. Strain through a sieve and then through cheesecloth. In my photo, the pieces are a little large, it was necessary to grind longer.
  5. 5. Horchata can be drunk immediately, but it is best to chill it in the refrigerator. Store refrigerated for up to two days.
  6. 6. For the rice horchata, place the rice in a blender with 500 ml of water and grind just enough to break the rice into large pieces.
  7. 7. Leave to brew for at least 4 hours.
  8. 8. Then pour the mixture back into the blender, and add the sugar and the rest of the water. Grind until smooth.
  9. 9. Strain through a sieve and then through cheesecloth. Rice horchata is ready.
