  1. Finely chop the onion and garlic, grate the carrots. Heat olive oil in a saucepan over medium heat, add onions, carrots and garlic. Fry for 4-5 minutes, stirring occasionally. Add quinoa, broth, salt, pepper and dried basil and stir.
  2. Cover the saucepan with a lid and bring the soup to a boil. Reduce heat to medium and simmer for 10-12 minutes. If the soup is very stable, you can add broth or water. Add coarsely chopped spinach and chicken fillet, stir. Cook for another 5-7 minutes. Add lemon juice and stir.
