The ancient traditional drink, the name of which is translated from Tatar as “rose (al) water (su)”, is a soft fermented milk drink made from milk, katyk (ryazhenka), honey, and beetroot juice. It was thanks to a few drops of natural dye Alsu that a beautiful name was given.

  1. 1. Beets (the smallest) wash, peel and cut into thin circles. Warm the milk a little (40 ° C, no more). Then pour the milk into a glass or ceramic dish.
  2. 2. Next, add honey to the milk, after it is completely dissolved, pour in katyk (you can fermented baked milk), then add beet circles. We mix everything well.
  3. 3. We leave the dishes with the drink in a warm place for 10 hours. I wrapped the bowl in a towel.
  4. 4. Then strain the drink and cool.
