Mulled wine "Biathlon"

No matter how good the classic version of this fragrant miracle is, the desire to make it in your own way is inescapable! I present my recipe.

  1. 1. We put the spices in an enameled pan, pour boiling water over it and cover with a lid for 5 minutes. Let their aroma slowly begin to unfold.
  2. 2. Mash thawed or fresh cherries in a bowl.
  3. 3. Add honey to the cherry. Let it stand for a while, giving the juice.
  4. 4. I'll cut the fruit. I prefer to cut thinly, but in large slices, so the fruit gives off the maximum juice, but at the same time does not strive to get into the glass when pouring mulled wine. Don't overdo it with the lime, you just need a couple of transparent circles. Add more to get sour. No sugar will save (tested from my own experience).
  5. 5. Add cherries with honey and fruits to the spices. Mix well and put on a small fire.
  6. 6. Cover the pot with a lid and let it heat up for a couple of minutes. Preparation for mulled wine should not boil! We just need to achieve maximum juice extraction.
  7. 7. We take out the extra fruit from the pan, making room for the wine. Trying to catch everything is not worth it. Do not throw away the fruits, they will still be useful to us.
  8. 8. Pour wine into a saucepan.
  9. 9. Periodically checking and stirring our future drink, we heat the wine to 80 degrees. Again, it is not necessary to bring it to a boil.
  10. 10. Usually, after heating, mulled wine is advised to keep it under a lid, but I do it differently, pour it into a large thermos, where I first put the fruit taken out of the pan. In a hermetically sealed container, mulled wine is perfectly infused and does not cool for a long time. Ideal for those who like to enjoy a spicy wine all evening long! Add sugar at this point if you like sugary drinks. I prefer to do without it.
  11. 11. If there is time and desire, we will decorate the glasses. I chose the classic version, sugar crust, and lime slices.
  12. 12. Put the mulled wine in a thermos to infuse for 40 minutes.
