Patatopita is a Greek pie stuffed with rice and potatoes. Thin crunchy dough with sesame sprinkles, aromatic potato-rice filling with onions fried in olive oil - very tasty!

  1. Break the egg into a cup and shake. Take one teaspoon of the egg mass and leave to grease the top of the pie. Add olive oil and salt to the egg for dough, mix.
  2. Warm up the kefir a little and pour into a cup, mix.
  3. Pour flour in portions and mix.
  4. Knead the dough. Cover the cup with cling film and refrigerate for 30-40 minutes.
  5. Peel the onion and chop finely.
  6. Fry the onions in olive oil until golden brown.
  7. Peel the potatoes, wash, put in cold water and boil. Salt a little during cooking.
  8. Rinse the rice under running water. Boil the rice in boiling water, add a little salt. Place on a sieve and cool completely.
  9. Drain the water from the finished potatoes. Mash potatoes in mashed potatoes. Add milk, stir.
  10. Add boiled rice, fried onions, mint, nutmeg, pepper, salt to taste to the potatoes. Stir again.
  11. Remove the dough from the refrigerator. Divide into 2 unequal parts. Roll out most of it into a thin layer according to the size of the mold with additions to the sides. Grease the mold with olive oil, lay out the bottom layer of dough, spreading it over the sides. Cut off excess dough.
  12. Put the filling on the bottom layer of the dough, smooth with a spatula.
  13. Roll out the second piece of dough and cover the filling with it, fastening it to the bottom layer of the dough. Add olive oil to the egg set aside for greasing the cake, mix. Grease the top of the cake, make a few punctures on the surface for steam to escape.
  14. If there is a small piece left, then you can make cake decorations out of it. Put the decorations on the cake, grease with the egg and butter again. Sprinkle sesame seeds over the top of the pie. Place the pie in the oven at 180 ° C for 40–45 minutes.
  15. Remove the finished cake from the oven. Let the cake cool slightly.
