Potato cookies with cheese and Provence herbs

Cheese-potato dough cookies will be an original snack for beer or white wine, as well as perfect for morning tea or coffee.

  1. We prepare the ingredients.
  2. It is better to choose a potato variety that does not boil soft.
  3. We wash the potatoes, put them in a saucepan, cover with water and boil until tender, about 20-25 minutes.
  4. Drain the broth from the potatoes. Cool the potatoes, peel and rub on a coarse grater. Put the grated potatoes in a deep bowl.
  5. Cheese is also rubbed on a coarse grater.
  6. Put grated cheese in a bowl with potatoes, add the yolk, soft butter, Provence herbs and salt.
  7. Then add the sifted flour and semolina.
  8. Knead soft dough.
  9. Wrap the dough in cling film and refrigerate for 30 minutes.
  10. After a while, turn on the oven to preheat to 180 degrees.
  11. We take out the dough and roll up the sausage about 30 cm long.
  12. Cut the sausage into 14 approximately equal parts.
  13. On a well-floured worktop, roll each piece of dough into a ball.
  14. We spread the cakes in a slide and transfer to parchment.
  15. Roll out the dough on parchment into a circle about 0.5 cm thick.
  16. Cut the circle of dough into 16 pieces.
  17. The resulting blanks for cookies are slightly pushed apart.
  18. We shift the parchment with the blanks for cookies on a baking sheet and put in a preheated oven. We bake cookies from potato-cheese dough with Provence herbs for 25-30 minutes.
  19. Put the finished cookies on the wire rack. Let's cool down.
