I offer you a wonderful recipe for a healthy breakfast. The omelet is tasty, juicy and, thanks to the pumpkin, is beautiful and slightly sweet. The onion gives the pumpkin omelet its unique mouth-watering aroma.

  1. Peel the onion and cut into small pieces.
  2. Peel and cut the pumpkin into small cubes of about 1x1 cm.
  3. Heat vegetable oil in a frying pan and fry the onion for about 2 minutes, until light golden brown.
  4. Add pumpkin and, stirring, cook under a lid over low heat until soft (about 20 minutes).
  5. Break eggs into a bowl, add salt and pepper to taste.
  6. Beat the eggs into a foam using a mixer.
  7. Pour the egg mixture into a frying pan with vegetables and cook under the lid. The omelet should grab onto the top.
  8. The pumpkin omelet is ready. We cut it into 2-3 parts.
  9. We lay out the omelet on plates and decorate with herbs if desired. Bon Appetit!
