  1. Soak dried shiitake mushrooms for 45 minutes. Then get out of the water, squeeze well, add water, salt and cook for 30 minutes.
  2. Cut the leeks into thin rings (I had onions), rub the carrots on a coarse grater or cut into cubes and fry in vegetable oil.
  3. Add soy sauce and simmer for two minutes.
  4. Wash potatoes, peel, cut into cubes and add to the pan with mushrooms.
  5. When the potatoes are ready, enter the passerovka, add the bay leaf. Bring to a boil and remove from heat.
  6. Place three cubes of tofu into each bowl before serving.
