Tarator is a Bulgarian cold soup that doesn't look like a soup at all. It has a minimum of ingredients and the time it takes to prepare it will also take a minimum. There are many options for this dish: with and without nuts, with kefir, with unsweetened yogurt. Tarator is also served in different ways: in a deep bowl, like soup, or, if more liquid, then in a glass for the second course. Choose the option you like and cook while the window is still hot summer.

  1. Cucumbers grate on a large grater.
  2. If the cucumber peel is thick or bitter, then it is better to remove it.
  3. Finely chop dill and garlic.
  4. Combine cucumbers, dill and garlic. Add vegetable oil.
  5. Add kefir, salt and pepper. Mix. If the tarator turned out to be thick, then add cold water.
  6. You can add chopped walnuts if you like. I didn't add. It seems to me that the nuts will spoil the delicate taste of the soup, but you decide for yourself.
  7. Serve tarator cold, even very cold! So much tastier :).
