  1. Rinse the squid carcasses, remove the hard chitinous plate, you can remove the thin skin.
  2. Bring the water to a boil, add 0.5-1 teaspoon of salt, dip the squids into boiling water and cook for no longer than 3 minutes.
  3. Drain the water, cool the squids.
  4. Cut squid carcasses into rings 3-5 mm thick.
  5. Mix flour with water or beer.
  6. Add oil and salt. Mix.
  7. Separate the whites (yolks are not needed). Beat egg whites with a mixer until stiff foam.
  8. Combine the mixture (dough) with whipped proteins.
  9. Dip the squids in the prepared batter.
  10. Heat the oil in a cauldron or a heavy-bottomed saucepan. Deep-fry squid rings on both sides until golden brown. First 3-5 minutes on one side.
  11. Then 3-5 minutes on the other side.
  12. Ready-made fried squids in batter can be dried from excess fat on a paper towel.
