Peel and chop the onion and garlic.
Peel potatoes and cut into cubes.
Heat oil in a large saucepan and sauté garlic and onion. Then add the potatoes and fry lightly for a couple of minutes.
Add vegetable broth, vinegar and cook for about 15 minutes until the potatoes are tender.
Add starch to thicken soup and let cool. Puree the soup with an immersion blender.
Add cream, season with chili pepper, salt and black pepper. We heat up again. When serving, sprinkle garlic soup with green onions, parsley or grated carrots. Serve with crackers if desired. Bon appetit!
