Pappa pomodoro Tuscan Bread Soup is a traditional tomato soup recipe that is thickened with bread. The use of stale bread and canned tomatoes makes this Italian soup quick and easy to prepare, yet flavorful and satisfying.

  1. Cut the onion into small cubes. 3 tbsp. l. Heat olive oil in a heavy-bottomed saucepan. Darken the onion with slight heat, avoiding frying, add the chili flakes and continue simmering, stirring occasionally. As a result, the onion will caramelize and turn golden, like for an onion soup.
  2. Peel the tomatoes in their own juice and chop. Pour the hot chicken broth and tomatoes into a saucepan with onions. Bring to a boil and, after reducing heat, continue simmering for another 15 minutes, stirring occasionally.
  3. Chop the garlic and basil and simmer in a separate skillet for a couple of minutes in the remaining olive oil.
  4. Add garlic with basil and chopped white stale bread to the tomatoes. Stir, salt, pepper and simmer for 10 minutes.
  5. Serve herb soup with chili flakes, drizzle with olive oil.
