  7. We collect salad with avocado, tomatoes, herbs. Put arugula and lettuce leaves, torn into pieces, on a plate.
  8. Put avocado, tomato, cilantro and green onion on arugula. Salt, pepper and season the vegetable salad with olive oil.
  9. Put a poached egg on top.
  10. Finely chop the olives and sprinkle them on the vegetable salad with the egg.
  11. Serve the salad with avocado, tomatoes and poached egg immediately after cutting the yolk.
