African orange cake

This is an airy orange cake, which is attributed to African cuisine.

  1. Prepare ingredients for the African Orange Cake.
  2. Wash the orange thoroughly and pat dry. Remove the zest from half an orange (only the bright part), and then squeeze out the juice.
  3. Combine egg yolks in a bowl with powdered sugar.
  4. Beat the yolks with the powdered sugar for about a minute.
  5. Pour the juice of half an orange and milk into the resulting mixture.
  6. Beat the mixture with a mixer for another 30 seconds.
  7. In the resulting mixture, sift the flour mixed with the baking powder. Stir dry ingredients into liquid base.
  8. Add the zest of half an orange to the resulting dough. Stir the dough.
  9. Turn on the oven to preheat to 165 degrees.
  10. In another bowl, beat the egg whites with a pinch of salt and 25g sugar until stiff peaks form.
  11. In two batches, fold the egg whites into the orange cake batter.
  12. The finished dough should be light, airy, it is very similar to ordinary biscuit dough.
  13. Transfer the batter to a cake tin and bake in the oven at 165 degrees for 50 minutes.
  14. Cool the finished cake in the form for 5 minutes, then transfer to a plate and sprinkle with powdered sugar through a strainer.
  15. Instead of powdered sugar, you can drizzle with chocolate icing, caramel syrup or decorate as you wish.
