Best  Potato muffins with cheese

Recipe for potato muffins with hot melted cheese inside. A simple but very tasty dish that can be served for breakfast, as a snack or a light dinner.

Ingredients

Directions

  1. Peel potatoes, wash and cut into cubes. Peel the garlic.
  2. Put the potatoes in a saucepan, add the peeled garlic and bay leaf. Pour the potatoes with water, salt and cook over medium heat for 15 minutes, until tender.
  3. Remove garlic and bay leaf. Throw the potatoes on a sieve and let the broth drain completely. Remember the potato masher and rub it through a sieve. Cool the mashed potatoes completely.
  4. Pour in the sifted flour.
  5. Add starch.
  6. Knead a soft and elastic dough.
  7. Turn on the oven to preheat to 180 degrees.
  8. Divide the dough into 8 equal pieces and shape into balls.
  9. Cut the cheese into eight equal pieces.
  10. Take one ball of dough and make a cake out of it. Lay one piece of cheese on the tortilla.
  11. Form a ball with cheese inside and roll well in breadcrumbs.
  12. Do this with all the pieces of dough and cheese.
  13. Prepare the muffin pan. These muffins definitely need a silicone mold, otherwise you just won't be able to remove the whole muffins. Also note that the cells should not be very large compared to muffin balls, otherwise the muffins will turn out low, because the dough spreads during baking.
  14. Lubricate the silicone mold with vegetable (or butter) oil and put the balls of dough into the cells.
  15. Bake potato and cheese muffins in a hot oven for 25 minutes. Do not bake muffins longer than 25 minutes or they will spread and burn on the bottom.
  16. Remove the potato and cheese muffins from the oven, remove from the mold, transfer to a plate and serve immediately.
  17. If desired, you can drizzle the muffins with melted butter.
