Cake with prunes, raisins and chocolate icing

If there is no time to prepare a complex dessert or cake, you can bake a quick and tasty cupcake with dried fruits. Easy to make, very soft and fluffy fragrant sweet cake with prunes and raisins will decorate a small family holiday or an ordinary day.

  1. Prepare all the necessary ingredients.
  2. Remove the butter from the refrigerator in advance and leave it on the table so that it is soft by the right moment.
  3. In addition to dried fruits, you can add dried nuts or candied fruits to the dough.
  4. Boil water in a kettle or otherwise.
  5. Pour boiling water over raisins and prunes and leave for 10 minutes to swell.
  6. Then drain the water, and put the dried fruits on a paper towel to get wet from excess moisture.
  7. Turn on the oven to preheat to 180℃.
  8. Combine softened butter, sugar and vanillin (or vanilla sugar) in a deep bowl.
  9. Add eggs and milk.
  10. Stir with a whisk until smooth.
  11. Add baking powder and sifted flour.
  12. Add dried fruits. Mix the dough with a whisk.
  13. The finished dough is viscous, thick, a thick drop falls from the whisk.
  14. Grease a cake tin with butter or line it with parchment paper and place the batter in it.
  15. Send the form to the oven, preheated to 180 degrees. Bake the cake for 35-40 minutes, until golden brown.
  16. Prepare frosting 5 minutes before cake is done. Break the dark chocolate into pieces, place in a bowl and pour over the cream.
  17. Melt the chocolate in a water bath or in the microwave (about 20-30 seconds).
  18. Then mix with a spatula until a homogeneous glossy chocolate mass is obtained.
  19. After a while, take the cake out of the oven. Check readiness with a match or a toothpick (after piercing the cake, it should remain dry).
  20. Carefully remove the cake from the mold onto a wire rack or wooden board.
  21. Brush the surface of the warm cake with chocolate icing (using a spatula or the back of a spoon).
  22. Leave the cake for 1 hour for the frosting to set.
  23. Cake with prunes, raisins and chocolate icing is ready to serve.
