  2. Take the ingredients out of the fridge a little early so the eggs will be easier to beat and the cake will rise better.
  3. Sift flour (if there is no scale, measure wholemeal flour into a 200 ml glass with a small top).
  4. Carefully separate the yolks from the whites. Place the yolks in a deep bowl, the whites in a whisking bowl (it must be completely dry). Be careful not to let the yolk get into the egg white, otherwise the egg whites will not whip into a fluffy foam.
  5. For the white dough, beat the whites with a mixer, starting at low speed and gradually increasing them (it took me about 3 minutes). Then add half the sugar. Beat egg whites until sugar dissolves.
  6. In the resulting foam, add half the milk and vegetable oil. Mix the mass with a whisk.
  7. Add half the flour, baking powder and vanilla to the bowl. At the lowest speed of the mixer, mix everything into a homogeneous mass.
  8. Now let's prepare the second part of the dough - yellow. To do this, add the remaining sugar to the yolks.
  9. Beat well with a mixer until light and sugar dissolves.
  10. Pour the remaining vegetable oil and milk into the bowl. Stir.
  11. Add the other half of the flour, baking powder and vanilla to the bowl. Stir with a whisk, breaking up any lumps.
  12. Grease the sides and bottom of a cake tin with butter.
  13. Preheat oven to 180 degrees.
  14. Pour half of the yolk dough into the mold, gently level its surface along the bottom.
  15. Pour cocoa powder into a fine sieve and dust the entire surface of the yellow dough so that there are no gaps left.
  16. Pour half of the protein dough on top and dust with cocoa powder.
  17. Then a layer of the remaining yellow dough, a layer of cocoa powder, and on top - the second half of the protein dough.
  18. Bake the "African" cake in an oven preheated to 180 degrees for 40 minutes.
  19. Check readiness with a toothpick - if it remains dry after piercing in the middle of the cake, then it's time to take the pastry out of the oven.
  20. Carefully transfer the cake from the pan to a wire rack to cool completely.
