Filo pastry pie with spinach, cheddar and feta

Spinach Cheddar Feta Filo Pie is tender spinach, an interesting combination of feta and cheddar, and a pine nut flavor. Try to cook, it's not difficult, even if not in 30 minutes, but still quick and easy.

  1. Toast the pine nuts in a dry frying pan until golden brown.
  2. In a deep bowl, combine the feta, eggs, cheddar, oregano, pepper and pine nuts.
  3. Mix.
  4. Heat butter and olive oil in a frying pan. Add spinach, nutmeg, zest and fry.
  5. Remove the pan from the stove and cool slightly.
  6. Add spinach to bowl with egg mixture. Crumple parchment paper measuring 50x50 cm into the shape of a ball and wet it with water under the tap, so it will become more plastic. Then unfold the parchment and lay it out on the work surface.
  7. Grease parchment paper with olive oil and place sheets of filo pastry on it. The sheets should be laid out slightly overlapping, so that the dough covers the entire surface of the parchment.
  8. Brush dough with olive oil and sprinkle with pepper.
  9. Repeat manipulations with dough sheets, olive oil and pepper two more times. There should be 3 layers of phyllo dough in total.
  10. Phyllo dough is sold with sheets of different sizes. You may need 4 sheets per layer, or maybe, like mine, two sheets.
  11. Transfer the dough along with parchment to a baking dish so that the edges hang down from the form.
  12. Pour over the filling and spread evenly.
  13. Cover the filling with the edges of the pastry.
  14. Bake the cake in a preheated oven for about 20 minutes at a temperature of 200 degrees.
  15. Cool the finished pie, cut into portions and serve.
