A very airy and fluffy chocolate biscuit that will serve as an excellent base for complex cakes.

Ingredients

  1. Preheat the oven to 170 degrees.
  2. Combine eggs, yolks, salt and sugar in a deep bowl and heat in a water bath to 55-60 degrees (if there is no thermometer, try with your finger, it should be hot, but not much).
  3. Then remove the bowl from the water bath and beat the contents with a mixer into a lush foam (beat at least 3-4 minutes at high speed).
  4. In a separate bowl, mix the sifted flour, cocoa, baking powder.
  5. Gently fold dry ingredients into the mixture.
  6. Stir with a spatula until smooth, being careful not to precipitate airiness.
  7. Cover the baking dish with parchment, pour the dough, bake for 25 minutes at a temperature of 170 degrees. Then completely cool the biscuit, take out their forms and cut into two cakes. Next - collect any cake to your taste :) Bon appetit!
