Mojito flavored muffins

These muffins are made with mint, lime juice and zest.

  1. Turn on the oven to preheat to 170 degrees. Line 12 muffin cups with paper rosettes. In a large bowl, combine the butter and sugar and beat with a mixer until fluffy, for 2-3 minutes. Then add vanilla extract and eggs (one at a time). Gradually add flour to butter mixture, mix well.
  2. Finely chop the mint leaves and put into the dough, mix. Then add the juice and zest of one lime to the dough, mix with a mixer at medium speed.
  3. Pour the muffin batter into the prepared molds and place in the oven, bake the muffins for about 25 minutes. Remove the muffins from the oven and let cool on a wire rack for 10 minutes.
  4. While cooling, the muffins should be quickly pierced with a skewer in several places on the top and lightly brushed with rum.
  5. Prepare cream for muffins. In a large bowl, sift the icing sugar, add the butter and vanilla extract, mix well. Then add lime zest and 1.5 tablespoons of rum, mix. If desired, add a dye to the cream.
  6. Using a piping syringe or bag, apply the frosting to the cooled muffins. Decorate muffins with sugar leaves (optional).
