The recipe for fragrant homemade pastries - airy muffins with raisins, cranberries and crispy almond crumbs that will not leave anyone indifferent.

Ingredients

Directions

  1. Butter should be at room temperature. If you have butter from the refrigerator, then just grate it and let it stand at room temperature for 5-10 minutes.
  2. Pour raisins and cranberries with hot water, leave for 10 minutes, and then drain the water, squeezing the dried fruits well and blotting with a paper towel.
  3. Turn on the oven to 180 degrees so that it warms up well in advance.
  4. Prepare the powder. Roasted almonds need to be ground in a coffee grinder into small crumbs.
  5. In a separate bowl, combine 50 g of flour and 50 g of sugar, rub with your hands into crumbs.
  6. Add almonds and grind again.
  7. (There is one nuance in the preparation of such a crumb. The butter should be from the refrigerator and the hands should preferably also be cold. And you need to make this powder quickly so that the butter does not melt.)
  8. Put the finished powder in the refrigerator.
  9. Now you can do the test. Start by whisking the eggs with the sugar and a pinch of salt.
  10. And then add softened butter.
  11. Whisk well.
  12. Add flour with baking powder, stir.
  13. Add raisins and cranberries, stir.
  14. Pour batter into buttered or paper-lined muffin cups.
  15. Sprinkle generously with chopped almonds. Send the muffins with raisins, cranberries and almond crumbs to the oven for 20-25 minutes (baking time depends on the oven).
  16. Allow the dried fruit and almond crumble muffins to cool and then serve with tea or milk.
