Bright and mouth-watering cupcakes are perfect for home gatherings. These cupcakes contain only the most delicious: crispy bacon, salty cheese, egg and fragrant green onions.

  1. For the filling, hard boil the quail eggs and peel them.
  2. Cut the bacon into strips, so it will be more convenient and faster to fry.
  3. Fry the bacon in a dry frying pan.
  4. Place on paper towel to absorb excess oil.
  5. Cheese grate on a coarse grater.
  6. Rinse green onions, dry well and chop finely.
  7. For the dough, combine kefir, vegetable oil, sour cream and an egg in a large bowl. Mix until smooth. Sift flour, add salt and baking powder. Gradually add flour mixture to liquid ingredients and stir until combined. Finally, gently fold in the bacon, cheese and green onions. Save some bacon and onions for cupcake garnish.
  8. Preheat oven to 180 degrees. Prepare muffin tins: grease them with vegetable oil or put paper capsules for baking. Put about a third of the dough into prepared forms and add one quail egg to the center. Cover the eggs with the remaining dough, filling the molds almost to the brim. Decorate with bacon on top. Bake in a preheated oven at 180 degrees for 25-30 minutes. Always refer to your oven. Readiness to check with a match or a wooden skewer.
  9. Cool the finished cupcakes and serve. Bon appetit.
