Snack muffins with meat and cheese

Appetizing cupcakes with meat and cheese are a great snack option, as well as a good alternative to bread for main courses. The preparation of the meat filling is very interesting: the pieces of pork are first fried until cooked, and then passed through a meat grinder. Roasting gives minced meat a more pronounced meaty taste and aroma, complemented by a delicate cheese note.

  1. Prepare the necessary ingredients. Flour will need 275 g (2 cups with a capacity of 200 ml with a slide). Remove the milk from the refrigerator in advance so that it warms to room temperature.
  2. Cut the pork flesh into small cubes.
  3. Heat the sunflower oil in a frying pan, put the pieces of meat. Salt, pepper and sprinkle with dried herbs (I have Provence).
  4. Over high heat, stirring frequently, sear the pork for about 8 minutes.
  5. Put the fried meat in a bowl and leave to cool.
  6. Now do the dough: in a bowl, combine milk, sunflower oil and eggs.
  7. Stir with a whisk until a homogeneous mixture is obtained.
  8. Mix flour with baking powder and sift into egg-milk base. Add salt and black pepper as well.
  9. Knead a homogeneous dough without lumps.
  10. Grate hard cheese on a coarse grater.
  11. Pass the cooled pork through a meat grinder.
  12. Add 3/4 grated cheese to minced meat.
  13. Prepare 12 muffin tins (I have silicone ones and I don't grease them with anything).
  14. In molds, lay out 1 tbsp. a spoonful of dough.
  15. Spread all the minced meat on the dough.
  16. Spread the remaining batter evenly over the minced meat.
  17. Sprinkle with remaining cheese.
  18. Bake cupcakes in an oven preheated to 180 degrees for 30-35 minutes, until a beautiful golden crust.
  19. Snack muffins with meat and cheese are ready. Let them cool down to lukewarm before serving.
