An elegant rich yellow porous slice of a cupcake resembles a sun-drenched landscape with a sprawling green tree in the center. A wonderful variant of savory pastries combined the harmony of taste and spectacular presentation. The batter of yellow cake is fluffy, buttery, bakes well, and holds the broccoli florets firmly in place to act as trees.

  1. Remove the butter and eggs from the refrigerator an hour before you start making the cake.
  2. Disassemble the broccoli into inflorescences - only large ones (20-25 grams) are needed for the cake. Trim them so that the inflorescences are about the same height.
  3. Place the selected broccoli florets in a bowl and cover with boiling water. Leave for 3 minutes.
  4. Then drain the water, and put the inflorescences on a napkin or towel and leave to dry.
  5. Turn on the oven to preheat to 180 degrees.
  6. Place soft butter in a bowl and beat with a mixer until light and fluffy.
  7. Continuing to beat the butter, add the eggs one at a time.
  8. Sift flour into the butter-egg base (a little more than a glass with a capacity of 250 ml).
  9. Add baking powder, sugar, salt and ground turmeric, which will give the finished cake a bright yellow color.
  10. With a mixer (now at low speeds), knead a homogeneous dough.
  11. The dough will turn out silky, tender, as classic cupcake dough should be.
  12. Line a rectangular cake pan with parchment paper.
  13. Put 2/3 of the dough into the form.
  14. In the middle, along the entire length of the workpiece, place the broccoli florets "legs" down - immerse them as much as possible in the dough.
  15. Cover the top of the broccoli with the remaining batter.
  16. Bake the broccoli snack cake in an oven preheated to 180 degrees for 40-45 minutes.
  17. Remove the baked cake from the mold and let it cool completely.
  18. Broccoli Yellow Cake Snack is ready to serve.
  19. Cut the cupcake into portions and serve as an appetizer or instead of bread with the main course.
