Tangerine cake turns out tender, with a bright juicy color, fragrant and festive. Prepare such a dessert for your loved ones on the New Year's table.

  1. Before preparing the tangerine cake, prepare all the necessary ingredients. Peel the ginger root and grate on a fine grater.
  2. Peel tangerines (should be about 300 g), pour water in a saucepan. Put the saucepan on the stove and boil the tangerines until soft (approximately bring to a boil).
  3. Drain the water from the saucepan. Puree tangerines with a blender. Cool down.
  4. Whisk soft butter with sugar.
  5. Add eggs, beat at maximum speed until fluffy white mass.
  6. Add the cooled tangerine puree and grated ginger to the egg mass.
  7. Mix almond flour, wheat flour and baking powder with a whisk.
  8. Add all dry ingredients to wet ingredients. Gently mix with a spatula from the bottom up until smooth.
  9. At the bottom of the form (I have a form with a diameter of 24 cm) lay parchment, grease the sides of the form with butter.
  10. Pour the cake batter into a mold. Bake a mandarin cake in a preheated oven at a temperature of 180 degrees for 40-45 minutes, until the cake is ready (ruddy).
  11. After 5 minutes, remove the finished tangerine cake from the mold, put it on a wire rack and let it cool completely.
  12. Prepare decor.
  13. Peel the tangerines, cut across the slices into 3-4 parts.
  14. Cook sugar syrup: mix sugar and water, put on fire and bring to a boil to dissolve the sugar. Cool syrup to room temperature. Add chopped tangerines to the cooled syrup.
  15. The top of the cooled cupcake can be soaked with sugar syrup using a brush. Remove the tangerines from the syrup and place on the cake.
  16. You can add tangerine leaves for decoration.
  17. Tangerine cake is ready for the table!
