Zucchini and cheese snack cake with nuts

Easy-to-prepare pastries from not quite ordinary ingredients. Zucchini is responsible for the texture of the cake, and two types of cheese are responsible for the taste, one of which is with mold, but it will take very little. Zucchini snack cake with cheese and nuts can be served with the main course, or separately, with some unobtrusive spread. It is convenient to take such a cupcake with you if you are going to have a snack outside the home.

  1. Choose good quality hard cheese - the taste of the finished baking depends on it. Kefir is suitable for any fat content.
  2. Remove the butter from the refrigerator 2-3 hours before cooking.
  3. Sift the flour into a deep bowl.
  4. Add baking powder, salt, sugar, ground black pepper. Stir.
  5. Place soft butter in the center of the dry mass.
  6. Mix with a spoon with dry ingredients until crumbs form.
  7. Turn on the oven to preheat to 180 degrees.
  8. Make a well in the center of the flour crumbs. Add eggs and kefir.
  9. Stir with a spoon until all ingredients are moist.
  10. Wash the zucchini, trim the edges on both sides. Grate the peeled zucchini on a medium grater.
  11. Add zucchini to the dough. Stir.
  12. Grate hard cheese on a coarse grater. Cut blue cheese into small cubes.
  13. Add two types of cheese to the dough. Stir.
  14. Set the pan to medium heat and heat well. Pour in the walnuts. Dry the nuts for 4-5 minutes, turning occasionally with a spatula.
  15. Cool the dried nuts a little and chop not too finely.
  16. Add nuts to the dough. Stir.
  17. The dough becomes thick.
  18. Grease a baking dish with butter and sprinkle with flour. Shake off excess flour by turning the pan over (I use a 28x12 cm rectangular glass pan).
  19. Pour the dough into the mold and smooth with a spatula.
  20. Send to a preheated oven and bake a cake at 180 degrees for 40-60 minutes (baking time depends on the characteristics of your technique, the size and material of the mold used). Check readiness by piercing with a wooden skewer (if the dough is baked, the skewer should come out dry).
  21. Zucchini-cheese snack cake with nuts is ready. Let the pastry cool slightly in the mold and remove to the wire rack.
  22. Once completely cooled, transfer the cake to a serving platter.
