Zucchini muffins with bacon

Muffins with zucchini, fried onions and bacon are a versatile snack. Inclusions of bacon and onions give the muffins a very appetizing aroma and taste, and the addition of chopped zucchini - delicious juiciness. Muffins are soft, with a delicious crispy crust, equally tasty both hot and chilled. Try it!

  1. Remove the butter from the refrigerator in advance, cut into small cubes and leave at room temperature so that it softens.
  2. Grate the zucchini on a fine grater. Sprinkle the chopped zucchini pulp with 1 pinch of salt, mix. Leave for 8-10 minutes for the zucchini to release its juice.
  3. Finely chop the peeled onion.
  4. Heat vegetable oil over medium heat. Add the onion and sauté for 7-8 minutes, stirring occasionally, until soft and golden. For a while, transfer the fried onions to a plate and cool slightly.
  5. Beat the softened butter with a blender for 1 minute until it turns white and becomes soft and fluffy.
  6. Whisk the eggs into the butter, add salt and sugar.
  7. Whisk for about 1 minute more, until smooth.
  8. Mix flour with baking powder. Sift through a sieve into a bowl of egg-butter mixture.
  9. Mix well.
  10. Turn on the oven to preheat to 200 degrees.
  11. Finely chop raw smoked bacon.
  12. Add chopped bacon and fried onions to the batter.
  13. Squeeze the grated zucchini and drain the juice that stands out. Add zucchini to the rest of the ingredients.
  14. Mix thoroughly.
  15. Prepare your baking molds. I use silicone molds, so I don't grease them with anything. If you are using ceramic or metal molds, grease them with a thin layer of butter and sprinkle with flour.
  16. Divide the dough into molds. I got 6 muffins.
  17. Sprinkle each muffin with a pinch of sesame seeds.
  18. Pour 100-150 ml of water into the bottom of the baking tray. Place muffin cups on a baking sheet.
  19. Send the baking sheet to the oven preheated to 200 degrees and bake the muffins for 25-35 minutes, until golden brown. Test doneness by piercing one of the muffins with a wooden skewer. If the skewer comes out without any sticky dough, the muffins are ready. Let the muffins cool slightly.
  20. Remove the bacon and zucchini muffins from the molds and serve.
