milk 1 l
kefir 1 l
eggs 6 pcs.
salt 3 tsp

Pour milk and kefir into a saucepan, heat over medium heat. Do not boil.
While the milk with kefir is heating, beat the eggs with salt for 5 minutes at high speed.
Pour the egg mixture into the heated milk in a thin stream, stirring constantly. Cook over medium heat.
When the mixture boils, cook over medium heat for another 2 minutes, stirring constantly.
Cover the colander with gauze folded in several layers and carefully lay out the curd, press well with a spoon to form the shape of the curd. Leave to stand on the table for 1 hour for the serum to come out.
After an hour, carefully put the cottage cheese into a bowl, cover with a lid and send it to the refrigerator for 10 hours.
