INGREDIENTS:
sugar 250 g
wheat flour 75 g
potato starch 75 g
chicken eggs 4 pcs.
fat cottage cheese 500 g
cream 200 ml
Strawberry 450 g
oranges 1 pc.
lemon 1 pc.
baking powder 2 tsp
salt 1 pinch
whipped cream 6 tbsp.
powdered sugar 2 tbsp.
PREPARATION:
Make a biscuit dough: grind the yolks with 150 g of sugar and salt. Whisk the whites into a thick foam. Combine flour, starch and baking powder.
Gently mix the whites with the yolks, sift the bulk products on top, mix. Place in several tins (or one large one) and bake for 20-30 minutes depending on the size of the crust at 175 ° C.
Prepare the filling. Soak gelatin in cold boiled water, let it swell. Squeeze the juice out of the orange, heat the gelatin in it to dissolve.
Whisk in the cream. Mix the cottage cheese and the rest of the sugar, gradually add the cream, grated lemon zest and lemon juice.
3 tbsp. mix tablespoons of cottage cheese with orange juice, then mix with the rest of the cottage cheese. Set aside a few beautiful berries, cut the rest and mix with the cream.
Cut the biscuits in half. Place in cooking rings, cover with cream and smooth. Place the second dough cake on top. Cover with plastic wrap and refrigerate overnight.
Sprinkle the biscuits with icing sugar before serving, garnish with whipped cream roses and whole berries. Refrigerate until serving.
