Calzone Mini Pizzas With Salami And Ricotta

INGREDIENTS:

wheat flour 400 g

fresh yeast (or 1 teaspoon of dry yeast) 20 g

olive oil 5 tbsp

sugar 1 tsp

ricotta cheese 250 g

salami 200 g

parmesan cheese 50 g

salt taste

dried basil taste

dried rosemary taste

ground black pepper taste

egg yolk 1 pc.

PREPARATION:

Mix yeast, 180 ml warm water, sugar and 1 tbsp. a spoonful of flour. Leave it on for 10-15 minutes. Separately sift the flour and salt mixture onto a work surface. Make a hole in the center.

Add dough to the hole, 4 tbsp. tablespoons of butter and knead a smooth elastic and non-sticky dough. Leave in a warm place for an hour - the dough should double in size.

Chop or wipe the ricotta, add 1 tbsp. Spoon butter, spices and basil. Add grated Parmesan and diced salami.

Stretch the dough into a layer 5 mm thick and cut out the circles with a bowl. Brush each tortilla with olive oil, add a tablespoon each of the filling, and pin the edges together. Pinch with wet fingers.

Leave the pizzas in a warm place for 20 minutes. Brush with egg yolk shaken with water. Sprinkle with dried rosemary, bake for 15-20 minutes in the oven at 200-220 ° C.
