INGREDIENTS:
apricots (pitted) 2 Kg
sugar 1.6 kg
PREPARATION:
Set aside about a third of the apricots (more dense), and chop the rest of the fruits in mashed potatoes using a meat grinder or food processor.
Put the puree in a saucepan. Put on moderate heat and cook for 15-20 minutes, stirring occasionally.
Chop the rest of the apricots very finely. When the puree thickens a little, add sugar and stir until dissolved.
Add chopped apricots and cook over medium heat for 10 minutes, skimming off the foam. Arrange the jam in sterilized jars, close the lids, wrap with a blanket and leave to cool completely.
It is advisable to store jam in a cool dark place.
