INGREDIENTS:
pasta 500 g
brisket (or bacon) 350 g
fat cream 250 ml
grated parmesan cheese 80 g
chicken eggs 3 pcs.
dried basil taste
salt taste
ground black pepper taste
PREPARATION:
Boil the pasta in salted water until tender. Drain off the liquid, leaving a couple of spoons. Place the pasta in a warm place, cover to keep it warm.
Cut the bacon or brisket into strips or cubes. Fry in a skillet until golden brown.
Combine cream, eggs, some ground pepper, cheese and put on high heat for 40 seconds, stirring constantly.
Reduce heat to low, add a couple of tablespoons of pasta water and cook the sauce for 2 minutes, stirring occasionally. Keep the fire very low, otherwise the eggs will curl.
When the cheese is melted, add the bacon, pasta, and basil. Stir, turn off heat and let stand for a couple of minutes. Place on warm plates and serve immediately.
