INGREDIENTS:

pork head 1 pc.

lean pork 1 Kg

pork legs 2 pcs.

parsley root 2 pcs.

celery root 2 pcs.

garlic 100 g

spice

salt

PREPARATION: +

Rinse and clean the head.

Cover with water, add legs and pieces of meat.

Leave the food for three or four hours, change the liquid twice.

Put celery and parsley root, spices, salt and garlic in a saucepan.

Add the soaked offal and meat, pour in fresh water, cook for four hours, remove the foam.

Cut meat and cartilage into pieces. Salt to taste.

Transfer the products to silicone molds, pour over the strained broth.

Leave in the cold overnight.

Serve with horseradish or mustard.
