Cottage cheese muffins with raisins

It is enough to add just a pack of cottage cheese to the dough, and ordinary muffins turn into airy desserts with a light curd aftertaste.

  1. I put cottage cheese, sugar, butter at room temperature and eggs in a blender. I mix everything at a low speed, gradually increasing the speed.
  2. I shift the curd mixture into a bowl, pour in a little sifted flour.
  3. I add baking powder, vanilla sugar and a pinch of salt. While stirring, add the remaining sifted flour in portions.
  4. At the end, I add raisins, previously washed with hot water and dried with a paper towel.
  5. Mix the whole mass well until smooth.
  6. I spread the curd dough in portions in silicone molds. I don't grease the forms.
  7. For baking, I put muffins with raisins in the oven, preheated to 180 degrees, for 35-40 minutes. The baking time and temperature depends on your oven. I bake cupcakes until golden brown. I check the readiness of the cupcakes with a toothpick.
  8. I take out the ready-made cottage cheese muffins with raisins from the molds, sprinkle with powdered sugar on top and serve with tea.
