Homemade cupcakes on the table - these are the details that maintain the atmosphere of comfort in the house. The recipe for cupcakes with the addition of lemon zest and whipped proteins to the dough is simple, tried and tested many times and clearly verified. Cupcakes made from such a dough always turn out perfect - soft, airy, moderately sweet, with a pleasant lemon flavor.

  1. Remove the butter from the refrigerator about 30 minutes before you start making the cupcakes.
  2. Use a fine grater to remove the zest (yellow outer layer of the peel) from half a lemon.
  3. In a bowl, combine the softened butter, half the sugar (45 g) and the zest.
  4. Beat with a mixer for a minute, until fluffy and bright.
  5. Break the eggs. Separate the egg whites into a mixing bowl and set aside for now.
  6. Add the yolks to the butter base.
  7. Beat again with a mixer for 20-30 seconds.
  8. Turn on the oven to preheat to 190 degrees.
  9. Combine the egg whites with the remaining sugar (45 g) and a pinch of salt and beat at high speed with a mixer until a strong foam is obtained, at least 4 minutes.
  10. Sift 1/3 of the flour into the butter base.
  11. Stir in with a spatula.
  12. Add half of the beaten egg whites
  13. Stir the egg whites into the dough.
  14. Now add the baking powder to the rest of the flour. Sift the mixture into the dough.
  15. Stir again with a spatula.
  16. Put the second part of the protein mass into the bowl with the dough.
  17. Mix gently again.
  18. The result should be a fluffy and very tender dough.
  19. Divide the batter into cupcake liners. I have molds with notches in the middle - in this case it is more convenient to first transfer the dough into a pastry bag, and then put it into molds. Got 6 cupcakes.
  20. Bake the lemon muffins in a preheated oven at 190 degrees for about 20-25 minutes (muffins took 18 minutes in my pans).
  21. Cool the finished lemon muffins, remove from the molds on a dish and serve.
