Gingerbread yogurt muffins with lemon zest

Cupcakes on yogurt with the addition of fresh chopped ginger have an original spicy and slightly burning flavor. Such dessert pastries will not go unnoticed on the table. In a duet with lemon zest, ginger plays a great new refreshing note in the usual cupcake recipe.

  1. Hold the butter at room temperature first - let it soften.
  2. Combine flour with salt and baking powder, then sift.
  3. Yogurt can be replaced with low-fat sour cream or fatty kefir.
  4. Peel the ginger root from the skin and chop on a fine grater. Remove the rind (yellow outer layer) from half a lemon.
  5. Combine lemon zest, chopped ginger and 50 g of sugar. Puree the mass with a blender.
  6. For smoother mixing, you can add 1-2 tablespoons of yogurt.
  7. Turn on the oven to preheat to 200 degrees.
  8. In another deep bowl, combine the remaining sugar with soft butter. Whisk until smooth.
  9. Continue beating while adding eggs one at a time. After each addition, achieve a uniform mass.
  10. Add a mixture of sugar, zest and ginger to the butter-egg mass.
  11. Alternately pouring in drinking yogurt and pouring flour mixture, start the dough for muffins.
  12. The dough turns out to be thick, a thick, heavy stream flows down from the shoulder blade.
  13. You can use paper muffin liners to prepare the molds - this way the finished cupcakes will look more appetizing and easier to remove from the molds.
  14. Pour 2 tablespoons of batter into each mold.
  15. Send the filled molds to the oven preheated to 200 degrees, bake the cupcakes for 20-25 minutes.
  16. Pierce the baked cupcakes with a match, if it remains dry, the pastry is ready. Let cool slightly in the molds.
  17. Remove the slightly cooled cupcakes from the molds to a dish and leave to cool completely.
  18. Ready dessert pastries can be decorated as you like: cream, powdered sugar or coconut flakes.
