Ingredients
Directions
In a small bowl, pour orange juice over oatmeal and let stand 5 minutes. In another large bowl, combine flour, sugar, baking powder, salt and baking soda. Add vegetable oil and eggs to a bowl with oatmeal, mix well. Pour this mass into dry ingredients and knead a homogeneous, liquid dough. Stir in berries and orange zest.
Turn on the oven to preheat to 200 degrees. Line cupcake liners with paper rosettes and fill 2/3 full with batter. In a separate bowl, mix walnuts, 1/3 cup sugar and cinnamon, sprinkle the dough in molds with this mixture.
Put the molds with the dough in a preheated oven and bake orange muffins for 15-20 minutes, until a clean wooden stick. Remove the cupcakes from the oven, let cool slightly, and then remove the orange cupcakes from the molds.
