Snack muffins with cheese, garlic and herbs

Delicate, airy snack muffins with a soft mozzarella center can be served on their own or instead of bread with the main course. The dough is unusual in that grated hard cheese, chopped herbs and aromatic garlic are added to it. Cheese muffins are very convenient to take with you, for example, to a picnic.

Ingredients

  1. Choose a hard cheese that melts well.
  2. Sour cream and milk will suit any fat content.
  3. Sift flour.
  4. Add baking powder, salt and black pepper to flour. Stir.
  5. In a deep bowl, combine the egg, sour cream and vegetable oil. Stir until smooth.
  6. Pour in the milk. Stir.
  7. Stir in the flour mixture in several batches. Stir until smooth after each addition.
  8. Grate hard cheese on a coarse grater and add to the bowl with the dough. Stir until evenly distributed.
  9. Rinse the parsley, pat dry and chop finely.
  10. Peel the garlic and grate on a fine grater.
  11. Add both chopped ingredients to the dough. Stir.
  12. The dough turns out thick, like pancakes.
  13. Turn on the oven to preheat to 180 degrees.
  14. Cut mozzarella into small cubes.
  15. For baking, I used a metal plate for 12 muffins, in which I put silicone capsules. If you are not using capsules, grease the mold with oil.
  16. Fill molds 1/3 full with batter.
  17. Place a piece of mozzarella in the center of each cell.
  18. Put more dough on top so that each cell of the form is about 3/4 filled.
  19. Send the muffins to the oven preheated to 180 degrees for 20-25 minutes.
  20. Snack muffins with garlic and cheese are ready. Cool them for 10-15 minutes in molds, and then remove to a wire rack and leave it to cool completely.
